I like this recipe because it's an appetizer that is fairly easy to make, to bring to a gathering, and is an easily eaten finger food - and most importantly tastes good. I used premade pimento cheese and realized there is quite a variety of pimento cheeses with varying consistences. The first container of pimento cheese required a little more flour and the second required a little more butter. They both were tasty. This recipe makes about two dozen.
Ingredients:
8 oz of pimento cheese 1 Tbsp of butter, melted
1 1/4 cup of flour 1/8 cup of hot pepper jelly, or your favorite jelly
Directions:
Heat oven to 350 degrees and line a cookie sheet with parchment paper Combine cheese and melted butter; than beat in flour until well combined. Roll into small balls, using a teaspoon as a measure. and place on cookie sheet about an inch apart. Press indentations into the balls with your thumb and fill with jelly. Bake until the bottoms are a little brown, about 15-17 minutes. Remove and cool on racks.
