1 English cucumber, peeled and diced
(Save 1/4 cup for garnish)
1 avocado, pitted, peeled, & diced
1 Tablespoon fresh lime juice
1 teaspoon dried cilantro
(or1/4 cup fresh cilantro)
1 scallion chopped, (2 Tablespoons)
1 cup nonfat plain yogurt
1 cup cold water
1/2 teaspoon coarse salt
1 jalapeño, seeded & chopped (optional)
Puree all ingredients all ingredients together and chill for at least 30 minutes. Divide into 4 serving bowls and garnish with the reserved cucumbers.
I also garnished with slivered almonds or you can add diced tomatoes or possibly another savory addition.
