1 1/2 English cucumber, peeled and diced
3 avocado, pitted, peeled, & diced 1 1/2 Tablespoon fresh lime juice 1 teaspoon dried cilantro (or1/4 cup fresh cilantro) 3 scallions chopped, (4 Tablespoons) 1 cup plain yogurt, (with or without fat) 3/4 - 1 cup cold water 1/2 teaspoon coarse salt 1 jalapeño, seeded & chopped (optional) |
Puree all ingredients all ingredients together and chill for at least 30 minutes. Divide into 6 bowls.
Garnished with slivered almond, diced tomatoes or possibly another savory topping. You may want to experiment with this mild creamy soup. Mint is a nice addition and to add a surprising element, you may want to add a little ginger beer. |
