This cookie recipe is just slightly tweaked from Bob's Red Mill website which has lots of wonderful recipes. My family all really liked these "healthier than most" vegan cookies.
1 1/4 cup almond meal 1 cup old fashioned rolled oats 1 cup whole wheat flour 1/2 tsp. ground cinnamon 1/4 tsp. salt
1/2 cup neutral oil 1/2 cup maple syrup 1 tsp vanilla extract 1/8 cup white sugar 1/4 cup jam
1. Preheat your oven to 350 degrees. In your food processor, process the almond and rolled oats until you have a coarse crumb. Transfer the mixture to a large bowl and stir in the flour. Add the rest of the ingredients and stir until combined. 2. Roll the mixture into 1-inch balls and then roll to coat in the sugar. Place on a baking sheet and use your thumb to make an indentation in the middle. Add about 1 teaspoon of jam to the center of each indentation. Makes about 24. 3. Bake in the preheated oven 10 minutes. Cool on rack and enjoy.
