1 (14.5 ounce) can of sliced potatoes
1 (6 ounce) can of tuna fish
1 (14.5- ounce) can green beans
1 cup quartered marinated artichokes
1/4 cup pitted and halved black olive
2 hard boiled eggs if you have them
Anchovies if you like them
salt and pepper to taste
great olive oil and vinegar
The ingredients listed are for two, but it can easily be increased to whatever size you prefer, don't forget the manual can opener.
First open and drain the cans of potatoes and green beans and combine in a bowl. Measure and add the black olives and artichokes. Add the anchovies if you wish. Toss, taste, and add any salt and pepper you feel necessary. Drain and add the tuna fish and boiled eggs if available.
Combine about 3 Tablespoons of your favorite olive oil and 2 Tablespoons of vinegar. Whisk well and Pour over salad and toss.
