A group of 17 ladies learned recently that making the almost transparent pasta used for "melt in your mouth" ravioli is truly an art. Chef Michelle at the Fat Tuscan Cooking School in Gainesville Florida was our very patient instructor. The ingredients for this pasta are so basic and simple. You put some flour on a clean cutting board or counter, make a well and put an egg in the middle. You then mix it, and commence incorporating the flour until it's done! The trick is to learn how much flour to incorporate and how much you should knead it. The answer is: till it feels right. We all became artists for the day with Chef Michelle, who led us carefully though the pasta making steps and on to ravioli. Each of us made lovely raviolis, which were then individually boiled ( fresh pasta only takes just a few minutes cook). Then we ate our ravioli with one of two sauces either the marvelous marinara or an amazing Alfredo sauce. The skillful Chef Michelle quickly put together these sauces and had them simmering as we made the pasta. A cooking class is definitely a wonderful way to to "cook together with friends" or with new acquaintances - who will be your friends before the class ends.
Only a very knowledgeable and patient Chef could assist 17 novices into making great raviolis!
