Ingredients:
Salad: _____6 cups of mixed greens _____1 1/2 cups citrus slices _____2 avocados Dressing: _____1 shallot _____2 Tablespoons white wine vinegar _____3 Tablespoons olive oil _____1/4 teaspoon salt _____2 teaspoons crushed dried chives _____1 teaspoon dried mint _____6 Tablespoon sunflower seeds |
1. Wash and dry greens in spinner. *(Not necessary if already washed)
2. Break greens into bite size pieces if necessary, put appropriate amount in salad bowl, cover and refrigerate. 3. Drain citrus slices in medium bowl. 4. Peel avocados, slice in half, remove the seed, cut into slices and mix into citrus to prevent browning. 5. Dice shallot and mix with vinegar and salt in the small bowl. 6. Whisk in oil and stir in mint and chives. 7. Put 1 Tablespoon of dressing into avocado and citrus mixture 8. Toss dressing with greens. 9. Plate salad top with avocado and citrus 10. Sprinkle with sunflower seeds and serve. |
