This is a lovely Italian meal, without tomato sauce. Risotto is a creamy rice dish that takes the place of pasta in some areas in northern Italy. Risotto's mild taste allows pairing with a great variety of ingredients. After purchasing a Risotto Cookbook, I had the good fortune of having a husband who became an expert risotto maker. (If you have time, watching the movie "The Big Night" helps you understand the importance of Risotto to Italian Cuisine). Chicken Saltimbocca is fun to make. You flatten chicken breasts to make them uniformly thin and roll them up with a thin slice of ham and cheese. It makes for an elegant dish and guests are often very proud of themselves after making this dish. I haven't found anyone yet that doesn't like the Tiramisu. Tiramisu is also an elegant dish and easy to make. The amount of coffee liquor used in this recipe often depends on the cook.
