This recipe was taken from the site Blue Zones Recipes . The Blue Zones are the five places on earth that have communities of people who have live long and healthy lives. Besides being very nutritious, this recipe really tastes good and is fairly easy since frozen vegetables are used.
15 ounces garbanzo beans 2 cloves garlic 3/4 cup canned coconut milk 4 teaspoons curry powder 2 cups water
1 cup quinoa 4 cups frozen cauliflower 1 1/2 cups frozen peas 8 cups spinach salt and pepper to taste
1. Rinse and drain the garbanzo beans and mince the garlic 2. In a large pan on medium heat, warm the coconut milk, curry, and garlic for 3 minutes 3. Add the water and quinoa and turn heat to medium-high. Once boiling, reduce heat to low and simmer for 10-12 minutes, or until quinoa is almost done. 4. Add the frozen cauliflower, beans, frozen peas and an additional 3 tablespoons of water per person. Stir and continue cooking until the frozen cauliflower is completely warm and tender. 5. Turn off the heat and add the spinach, allowing it to gently cook by the heat of the dish. 6. Season to taste gradually with salt and pepper.
