Here is a recipe for Sautéed Fruit. It is delicious with ham or pork roast. I wanted to liven up some Christmas leftovers and served this dish. A bonus for me was that I used my fresh winter garden mint as garnish.
2 Golden Delicious apples, peeled, cored, and cut in thick slices 1 Anjou pear, peeled, cored and cut into thick slices 1 1/2 Tablespoon fresh lemon juice 2 Tablespoons butter 1/3 cup orange marmalade 2 Tablespoons Grand Marnier or Cointreau liqueur 1 Tablespoon butter 1 or 2 navel oranges peeled and sectioned Sprigs of fresh mint 4 servings In a small bowl, toss apple and pear slices with lemon juice. In large skillet, melt 2 Tbs butter. Add fruit and sauté over medium-high heat until apples are tender. Stir gently. With slotted spoon, transfer fruit to serving bowl. To same skillet, add marmalade, liqueur, and 1 Tbs. butter. Stir until melted. Pour sauce over the fruit. Add the oranges and toss gently Garnish with sprigs of fresh mint.
