Buckwheat gets mushy easily and often needs to be cooked less than the package indicates if you want a separate nutty flavor. The Russian brand I used said to add 100 grams of buckwheat (a rounded 1/2 cup) to 400ml. (about 1 1/2 cups) of boiling water and cook on low boil for 12 minutes and drain. After trying other methods, I liked this consistency best. This recipe combines mushrooms and onions for a tasty, nutritious dish.
Ingredients:
1/2 cup buckwheat (cooked as above) 3tbspunsalted butter 1medium onionchopped
16 oz mushrooms sliced 1 cup green onions chopped salt & pepper to taste
Directions:
Prepare the ingredients; chop onions and slice mushrooms. Preheat a pan, add butter and onions to the pan. Then add mushrooms to the pan and cook until golden brown. Combine mushroom mixture with the cooked buckwheat, let it sit for about 5 min to allow flavors to meld. Add in the chopped green onion and stir to combine. Serve and enjoy!
