Ingredients:
1 Tablespoon vegetable oil 1 medium onion, sliced 1/3 pound of your favorite steak sliced thin* optional 1/2 teaspoon of garlic salt 15 ounce can of black beans 10 ounces of corn 2/3 cup favorite salsa or more to taste 1 1/2 cup of cooked rice |
Directions:
Heat oil in medium pot over medium heat. Add the sliced onion and sauté for 2 minutes or til wilted. Add steak, season with garlic salt and cook until desired temperature. Drain about half of the liquid off the beans and add to the pot along with the corn. Continue heating for at least 4 more minutes, until all is heated through. Add the salsa. Taste and adjust amount as necessary. Serve over rice |
