You are more apt to make a special meal for two if you keep it fairly simple. For this meal we bought a ready-made salad, put our piece of fish on aluminum foil and added some chopped vegetables and herbs and let it bake in the oven. And finished with a wonderful and very easy melba peach desert.

The recipe for the peach melba is a simple one. 1 can of peach slices. (optional - drained and soaked in cream sherry for a few hours) Ice Cream - your choice Frozen Raspberries - Heated ( If they are not sweetened, you might add a little sugar to taste)
