Green Waldorf Salad

Baked Fish with Olives and Feta*
Olive oil 1 1/2 tablespoon of olive oil Garlic 3 cloves Onion 1 large Dry white wine 2/3 cup Fish fillets*** 6 (4-5 oz each) Tomatoes 2 medium Sliced black olives 1/3 cup Feta cheese 3/4 cup It's your choice.
The ingredients which have an asterisk * next to them, might seem generic, but specific choices may make a real difference to the dish. These are your dishes- I always use dark brown sugar, what will you choose? * Good olive oil - always a good choice for a salad, but I used the Blood Orange Infused Olive Oil from our local olive oil and vinegar store called Saporitos . This really elevated the salad into something special. ** Apple - try a sweet one like the Fuji or tart like Granny Smith. It will change the taste; put your stamp on this dish. *** Fish fillets - for this recipe you need a firm fish like snapper or grouper. Check the frozen section, frozen fish defrosted in the refrigerator may be better quality than the fish in the case. ****Butter or Margarine My mother always used butter, but after looking at Saporitos website, I am going to try making these with a flavored olive oil |
