This Puttanesca entrée is our signature house recipe, a tasty dish that always gets rave reviews! It is also flexible enough to fit almost anyone’s dietary preferences. Vegans can enjoy this wonderful sauce without the tuna. The meal is very low in saturated fat, and by using whole-grain pasta you can accommodate most health-conscious guests. The dessert includes the health benefit of fruit, fresh or frozen. As with most pasta dishes, the Puttanesca can easily stretch to fit a big group. Keep in mind that if you quadruple the dish, as we did with one large church group, tears are apt to flow from sautéing the garlic and shallots. Sliced honeydew is a cool optional addition to pass along with the main course. The salad is great, the mint adds an interesting flavor to the spinach and the warm oil wilts the spinach just a little. The peach and blueberry crisp is another staple in our house. It's easy, great tasting, and is a wonderful way to include some fruits.
