Though the recipe calls for 2 pounds of carrots, I halved the recipe and the picture above is a one pound of baby carrots. Using a bag of baby carrots makes it easy. There is usually water inside the bag, so I drained it and spread the carrots on paper towel before I began.
2 pounds of carrots 1/4 cup olive 4 large cloves of garlic, minced 1/4 cup grated parmesan cheese
2 Tablespoons Panko bread crumbs Salt & Pepper to taste Fresh chopped parsley for garnish, optional
1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and lightly spray for easy cleanup. 2. Mix carrots, olive oil, minced garlic and bread crumbs in bowl and spread out on the baking sheet.. 3. Bake for 20-25 minutes or to desired tenderness. Toss with spatula half way through. 4. Remove from oven and add salt and pepper to taste. 5. Serve topped with fresh parsley if desired.
