Ingredients:
1 Tablespoons of oil 1 onion, chopped 1 green pepper, chopped, 4 cloves of garlic, chopped 1 Tablespoon of fresh ginger, minced 1 Tablespoon chili powder 1 teaspoon ground cumin 2 medium sweet potatoes, peeled and cubed (1/2") 1/3 cup of tomato paste 12 oz ground turkey 2 small zucchini 1/2 cup peanut butter |
Directions:
Before you start cooking: Chop the onion, green pepper, and garlic. Measure the ginger, chili powder, and cumin Peel and cube the sweet potatoes. Measure tomato paste Slice the zucchini and peel if you wish Measure the peanut butter Begin cooking: In a large pot with 2 Tablespoon of oil, saute the onion, pepper until softened. Then add garlic and ginger, saute for 2 minuets, stir in chili and cumin. Add the the potatoes and tomato paste. Just cover the entire mixture with water and mix well. Simmer for 30 minutes. While simmering, brown the ground turkey in 1 Tablespoon of oil. When the sweet potatoes the desired texture, dilute the peanut butter with a cup of the stew liquid. Add the diluted peanut butter, zucchini, and turkey to the stew and cook 15 minutes more. Serve on rice. |
