Ingredients:
4 teaspoons olive oil, divided 1 cup of sliced mushrooms, (wiped off with paper towel or mushroom brush) 1/3 cup chopped onion 3 cloves garlic, minced l large red pepper, sliced into strips (or 1/2 cup jarred peppers) 8 cups spinach (if raw 4 cups) 1/2 teaspoon salt |
Directions:
In a non-stick pan that can handle 8 cups of spinach, add half olive oil and heat to medium high. Add the sliced mushrooms, turn after 2 minutes, sauté another two minutes, remove mushrooms from the pan. Add the other half of the olive oil, sauté the onion for 2 minutes, add the garlic and red pepper, sauté 3 minutes. Add the spinach, sprinkle with salt, stir constantly for 2 minutes or until the spinach is done to your preference. Add back the mushrooms and serve. |
