This is Becky's beautiful Sicilian Salad.
First make a vinaigrette by whisking together 2 tablespoons of red wine vinegar with 4 tablespoons of olive oil. Then on to the beautiful blood orange slices. You need to first peel two blood oranges with a small serrated knife, removing the peel and white pith. Then carefully slice these naked oranges crosswise. Peel and section 2 navel oranges. Put your about 2 cups of your favorite greens in a salad bowl and add one small bulb of fennel, thinly sliced (about one cup) and a thinly sliced red onion. Toss this salad with the vinaigrette and place the orange slices on the salad. |
