1 Tablespoon olive oil
3 cloves of garlic, minced 1 onion, minces 3 teaspoons of curry powder 1 teaspoon grated fresh ginger 1 fresh jalapeño pepper, seeded and minced 1 cup dried lentils 2 sweet potatoes, peeled and cubed 2 tomatoes, chopped, including juice (or 15 oz can of diced tomatoes) 3 cups vegetable broth 1 cup plain yogurt 1/3 cup minced cilantro or parsley |
Heat a large pot on medium high and add oil. Sauté the garlic, onion, curry powder, ginger and jalapeño for about 4 minutes. Add the lentils, sweet potatoes, tomatoes, and stock. Bring to a boil. Reduce heat to medium: cover loosely and simmer until lentils are tender, about 30 minutes. Just before serving, put on plain yogurt, a wonderful compliment to the spices. and add cilantro or parsley for a lovely presentation.
