Pasta Alla Puttanesca
Utensils

2 Cutting boards

Ingredients
2 Tablespoons garlic
   (about 6 cloves)
2 Shallots
1/8 cup Olive Oil
2 cans (28 oz)crushed
 tomatoes 
3/4 cup fresh basil
3/4 cup black olives, pitted
3/4 cup pimento-stuffed green olives
3 can (6 ounces) tuna
3 Tablespoons capers
1/2 teaspoon crushed red pepper flakes
​1 pound of pasta
3/4 pound Parmesan cheese 
Please read the entire recipe before beginning.  Preparation time is about 30 minutes.
Recipe
1.  Finely chop the garlic and shallots.
2.  Heat the olive oil in the skillet or electric frying pan
3.  Sauté the shallots and garlic in olive oil until slightly browned about three minutes.
4.  Add the tomatoes and sauté the mixture for about one minute.
5.  Fill the pot with water and begin heating it for the pasta.
6.  Chop the basil and slice the olives if they are not already sliced.
7.  Add the tuna, capers, olives red pepper flakes, and basil to the tomato mixture.  Reduce the heat and simmer for 15 
      minutes seasoning with salt and pepper. 

8.  Cook the pasta according to package directions.  Drain it and combine it with the sauce
9.  Mix ¼ of the puttanesca together with the pasta in a large bowl, serving it along with a bowl of the remaining puttanesca.    Pass the parmesan and grater, allowing guests to grate their own.

Timing Tips:
The puttanesca can easily be kept warm without any problems until needed.  The pasta, on the other hand, should be served soon after it is done.  Be sure you know how long the pasta will take and have the water close to boiling when you sit down for the salad.  The pasta can be added before you begin your salad or after, depending on how al-dente you wish the pasta to be and how leisurely the meal is progressing.
