This is a simple recipe which elevates the taste of the spinach and can be served either as a salad or side and can serve 4 - 6 persons.
1 Tablespoon of olive oil 2 garlic cloves, diced small 10 oz. of baby spinach 1/4 teaspoon of salt 1/8 teaspoon of black pepper
1/8 teaspoon of dried crushed red pepper 1/4 cup golden raisins 1/4 cup slivered almonds
1. Dice the garlic. 2. Toast the slivered almonds over medium heat in a small ungreased pan until light gold brown, checking frequently so they don't burn 3. Measure the salt and peppers into a very small container. 4. Measure the almonds and toasted almonds into a small bowl. 5. Heat the over olive oil in a large pot over medium high heat. 6. Add the garlic and cook for 30 seconds. 7. Add all the spinach and salt and peppers and toss constantly for 2-3 minutes or until the spinach's volume has been reduced by half. If you are not careful, the spinach will be reduced much more. Just before you take it off the heat add the raisins and almonds. Serve immediately.
